Mystica Fresh Kombucha is a healthy and cost-effective beverage. We make a Step-1 Kombucha - a simple fermented sweet tea. No secondary fermentations, extra flavouring, force carbonation, nor anything else is added to our Booch. These are exceptional fermentations packed full of probiotics, electrolytes & hydration.

It's important to note that all our Kombuchas are made from our almost mythical Mystica Mineral Water - some of the best mineral water available anywhere on the south coast. Our water is packed full of essential minerals like zinc and magnesium. There's even trace amounts of gold and silver right in the water we make our kombucha from!

What is the shelf life?

Each bottle is stamped with a suggested best before date that is 30 days from the day of bottling.

But in reality, Fresh Kombucha doesn't go bad. This drink contains LIVE Cultures and continues to ferment over time (even when refrigerated).

The best test is to take a sip. It can't hurt you and you may discover you like fully fermented kombucha (it provides the most probiotic bang for your buck!).

Is this kombucha carbonated?

No. Mystica Fresh Kombucha is a Step-1 fermentation. Consider this a primary fermentation only. A light carbonation may be present due to the active cultures, but it quickly dissipates upon pouring into a glass.

Most commercial kombucha is either force-carbonated or undergoes a secondary fermentation, plus flavour mixing (Step-2). That's why it's so fizzy.

Heavy carbonation will cause bloating and isn't great for the SCOBY cultures inside.

When CO2 mixes with water it creates carbonic acid, which can "acidify" your system (cancers are known to grow best in acidic environments).

We consciously choose to NOT carbonate our kombucha to provide a more natural & holistic beverage for your microbiome.

Is this Kombucha RAW?

Yes, Mystica Fresh Kombucha is UNFILTERED, RAW & UNPASTEURIZED. Technically, it's still fermenting right up until the moment you drink it ...

Can I grow My Own SCOBY from this?

There's something slimy on top

That's a SCOBY (Symbiotic Culture Of Yeast & Bacteria). This is a good thing, because it means the kombucha is ALIVE!

Just remove it and drink as normal (some people even eat it for a big hit of probiotics!).
